Crunchy Black Bean Tacos

I pinned this recipe a while back on Pinterest and then a friend reminded me of it when she posted about some Pinterest recipes she had tried. Let me just tell you, they were DELICIOUS! It was fast to make and it lasted me for 3 meals. I just put the extra bean mixture in the fridge and then pulled out what I needed to make 1 or 2 depending on how hungry I was. I topped it with salsa, sour cream, and guacamole!
